Artichoke and Curried Egg

INGREDIENTS 6 hard-boiled eggs
1 (16-ounce) can artichoke hearts
1/4 cup mayonnaise
1/2 cup sour cream
Salt and pepper to taste
Curry powder, to tastePeel and chop the eggs. Drain and chop the artichoke hearts. Combine the eggs and artichokes into a very coarse spread.
Mix the mayonnaise, sour cream, salt and pepper, and curry powder (make the curry flavor rather light). This is not to be hot but simply supportive of the eggs and artichokes. Mix together and refrigerate.
Mold into a mound on a lettuce leaf, and serve with crackers.
Makes 16 to 20 servings
I could sit down and eat this whole batch all by myself, but it's a little rich. Don't chop the artichokes too fine because you want something that you can heap on a small cracker.
