Amish Pineapple Cake

INGREDIENTS

CAKE

2 eggs
2 cups sugar
2 cups self-rising flour
2 tablespoons vegetable oil
2-1/2 cups crushed pineapple, drained
1/2 cup pecans, chopped
1-1/2 teaspoons vanilla

FROSTING 3-ounce package cream cheese, softened
1-3/4 cups confectioners' sugar
1 teaspoon vanilla
1 stick butter, softened
1-3/4 cups pecans, chopped

Preheat oven to 350 degrees.

Mix together sugar and flour. Add eggs and vegetable oil; stir together until moist and crumbly. Stir in remaining ingredients.

Bake in a 9 x 13-inch baking pan for about 45 minutes. Cool completely before frosting.

FOR FROSTING - Cream together all ingredients, except pecans. Cover cake all over with frosting and sprinkle on chopped pecans.
