Creamed Carrots

This dish is also very good with green beans.

INGREDIENTS

4 cups carrots, sliced
Salt and pepper, to taste
3 tablespoons butter
1 tablespoon onion, chopped
3 tablespoons flour
1-1/2 cups milk
1 cup grated cheese

Cook carrots. Season with salt and pepper; then place in a greased casserole dish.

Melt butter. Add onion and cook until tender. Add flour and stir until smooth. Gradually add milk, stirring constantly, and cook until thickened. Add cheese and stir until melted.

Pour sauce over carrots and stir gently. Bake at 350 degrees for 30 to 35 minutes.

Makes 8 servings
