Cream of Broccoli Soup

INGREDIENTS

1-1/4 pound broccoli
4 tablespoons butter
1/4 cup mushrooms, chopped
1 tablespoon onion, chopped
4 tablespoons flour
3-1/2 cups milk
1 pound sharp Cheddar cheese, grated
1 teaspoon salt

Cook broccoli. Chop and set aside.

Melt butter in a large, heavy saucepan. Add mushrooms and onion. Sauté until tender. Add flour and stir until bubbly.

Gradually add 1-1/2 cups milk, stirring constantly to prevent lumps. Add cheese and stir until smooth. Add remaining milk. Add broccoli and heat thoroughly.

Makes 8 servings
