Corn Bread

INGREDIENTS

1 cup sifted flour
1/4 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup yellow cornmeal
1 egg, well beaten
1 cup milk
5 tablespoons shortening, melted and cooled

Grease an 8 x 8 x 2-inch pan, bottom only. Preheat oven to 400 degrees.

Sift together first 4 ingredients. Mix in cornmeal.

Blend egg, milk, and shortening until well mixed; add to dry ingredients and beat until smooth.

Bake at 400 degrees about 20 minutes.
