Coffee Cake

INGREDIENTS 2 cups light brown sugar
2 cups flour
3/4 cup shortening
1 egg
2 teaspoon vanilla
1 cup hot coffee
1 teaspoon baking sodaMix sugar, flour and shortening until lumpy, do not mix until creamy. Remove 1 cup for topping and set aside.
Dissolve soda in hot coffee and add to the flour mixture. Add egg and vanilla. Mix until well combined.
Spread into a 9 x 12 x 2-inch sheet pan (this is a thin batter), sprinkle on reserved topping.
Bake at 325 to 350 degrees for about 30 minutes. Let cake cool and top with powdered sugar, if desired.
