Basque Potatoes

INGREDIENTS

1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup shredded carrot
1 clove garlic, minced
Fresh chopped parsley
2 cups chicken broth, homemade or canned
4 cups potatoes, peeled and cubed
Salt and pepper, to taste

Sauté onion, celery, carrot and garlic in melted butter in a 10-inch skillet until tender. Add chicken broth, potatoes, salt and pepper. Cover; simmer 10 minutes.

Remove cover. Simmer, stirring occasionally, 20 minutes or until broth has thickened. Sprinkle with fresh chopped parsley.
