Barbecued Liver

INGREDIENTS

1/2 cup tomato juice
1/4 cup water
2 tablespoons apple cider vinegar
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon chili powder

2 tablespoons bacon drippings
1 pound beef liver

Combine first 9 ingredients in small saucepan. Simmer for 15 minutes, stirring occasionally.

Remove any veins or skin from liver. Cut into 1/2-inch strips.

Heat bacon drippings in large skillet. Add liver strips, stirring constantly over high heat, just until the meat looses its red color. Overcooking makes liver tough.

Stir the barbecue sauce into the skillet containing the liver. Simmer together only until piping hot.

Serve over rice or noodles.
