Baked Rice

INGREDIENTS

2 tablespoons butter
1 medium onion, chopped
1-1/4 cups rich beef broth
2/3 cup water
1 cup uncooked, long grain rice
Slivered almonds

Sauté onion in butter. Add broth and water. Bring to a boil.

Place rice in a buttered casserole. Pour hot broth mixture over rice. Cover and bake at 350 degrees for 40 to 45 minutes. Sprinkle with almonds.

Makes 4 servings

NOTE - I also used rich chicken broth for this recipe for a different taste.
