Broccoli, Cauliflower, or Asparagus with Cheese

INGREDIENTS

1 head broccoli or cauliflower, or 1 bunch asparagus
Cheese Sauce

Cut vegetables into pieces. Cook until soft. Drain. Serve with Cheese Sauce.

CHEESE SAUCE

4 tablespoons butter
4 tablespoons flour
1 teaspoon salt
2 cups milk
1/2 cup cheese

Melt butter. Stir in flour and salt. Gradually add milk, stirring constantly. Cook until smooth and thickened.

Add cheese and stir until melted. Pour sauce over vegetable.

Makes 6 to 8 servings

VARIATION - Sprinkle buttered bread crumbs over cheese sauce.
