Braised Chicken with Green Chilies

INGREDIENTS

3 green chilies, skinned, seeds removed, chopped
1 (3-pound) chicken, cut into pieces
2 tablespoons butter
1 tablespoon peanut oil
1 onion, sliced
1 cup chicken broth, homemade or canned
1/2 teaspoon ground nutmeg, or to taste
Salt and freshly ground black pepper, to taste

Melt the butter and oil in a large skillet, brown the chicken a few pieces at a time. As the chicken browns, remove and keep warm.

Add the sliced onion to the fat in the skillet, and sauté until soft. Add the broth, nutmeg, salt, pepper and green chilies and bring to a boil.

Return chicken to the pan, cover with the stock, reduce heat and simmer until chicken is done - about 40 to 45 minutes.

NOTE - Fresh seasonal fruits and baked sweet potatoes or yams are an excellent accompaniment to this dish.
